One of my favourite dishes to cook and a great post gym meal. High in protein, low in fat and carbohydrates, it’s great if you’re shredding and trying to build muscle.
It takes just 45 mins
Serves 4
What you need.
1tsp coconut oil
250g of lamb, trimmed of fat and thinly sliced
140g of Shallots, halved
2 large Courgettes, cut into chunks
1/2 tsp of cumin paprika and ground coriander
red, yellow and green peppers, deseeded and cut into chunks
garlic clove, sliced
150ml vegetable stock
250g cherry tomatoes
Handful of roughly chopped coriander leaves
Directions
1.Heat oil in a large heavy base pan with a lid. Cook the lamb and shallots on a high heat for for 2-3 minutes until golden.
2.Add the courgettes and stir-fry for a further 3-4 minutes until they begin to soften.
3.Add the spices and toss well, then add the peppers and garlic.
4.Reduce to a moderate heat and cook for a further 4-5 minutes until they begin to soften
5.Pour in the stock and stir to coat. Add the tomatoes, season and then cover with the lid to simmer for 15 minutes, stirring occasionally until the veg are tender.
6.Stir though the coriander to serve.
